Tools and Hardware Reviews of AccuSharp 001 Knife SharpenerCustomer Review: AccuSharp knife sharpener Summary: 5 Stars
I was introduced to this product as soon as it hit the market by the supply house I got my restaurant equipment and I really like it. I had gotten every new idea there was for getting a good sharp knife both at home and where I had a few dozen to take care of. All the major brands and prices from twenty to a hundred and twenty; some were quite good but wore out fast others were just not good. The local service was fine for many of the knives but I found that this accu sharp was the best value, a super value that would put a perfect edge every time in seconds. Almost anyone can do it.
So, for my own knives I use this tool. I do not have to use it often because I keep the knife honed on a steel.
The only caution is do not use this tool as a honer. It does remove metal and that is good for burrs but not for daily use on your French knife or it will look like a foil in too short a time.
This is the best product/value for the job it does I have encountered in over 30years of using all available on the market. The price is right and it is even renewable with replacement parts so the plastic handle can go on and on.
At first I used the 001 model to sharpen hatchets & sissors too before they introduced special adaptations and it was great there too. I get a couple of them and always have one as they travel. for cook outs, camping where ever a dull blade might be encountered; it fits in a pocket and stays aligned through all kinds of knocking about in a drawer.
Customer Review: Fast and very good (but not excellent) Summary: 4 Stars
I like this sharpener and for 99% of people, this is probably the best purchase you could possibly make for your kitchen. Most people have good knives, but their knives are so dull as to be dangerous. This product will put a great edge on all your knives in just a minute or two.
So why is this not an unequivocal glowing recommendation? For that 1% of edge tool aficionados out there who have both the ability and the desire to put a glass smooth razor edge on a knife...surprise, this tool does not do that! The edge is certainly sharp, but coarse (as you would or should expect from a carbide sharpener). Even so, this tool is still great for setting the proper bevel, removing any nicks in the edge, and giving you fresh steel at the edge which will allow for a quick finish polish on a fine grit stone. After a couple of swipes on the AccuSharp, I finish my good knives on a 4000 grit followed by an 8000 grit water stone. That leaves me an edge I can literally shave with. Overkill? You betcha! But some things that are worth doing are worth obsessing about.
Do I recommend this product? Oh yeah! It is one of the things I tend to pack whenever I'm going anywhere that I might be called on to cook (e.g. the inlaws house, a week at a beach rental, etc...). I can't stand dull knives and this tool will put an edge on a butter knife.
Customer Review: Not impressed Summary: 2 Stars
I've been using the EdgeCraft 480 Chef's Choice EdgeCraft Diamond Hone Manual Pocket Knife Sharpener - 480 480 for a number of years. I decided to give the AccuSharp a try after seeing the review on Cook's Country.
The AccuSharp is more aggressive for restoring a dull blade. But if you stay on top of your knives, the EdgeCraft will maintain a sharper edge. Just a couple of quick and light swipes is all that's needed to start slicing tomatoes.
The AccuSharp seems to tear the steel as it removes metal. That leaves micro serrations which tear as they slice, similar to a saw. The AccuSharp is useful for serrated blades.
Both products are made in the USA.
Having said all that. Using a stone, I get a knife sharp enough to shave with. Neither of these products can do that. If you're really serious about sharp knives, learn to use a stone. It's not that difficult, nor does it take that long if you maintain your knives properly. I highly recommend this book The Razor Edge Book of Sharpening.
The Chef's Choice EdgeCraft 480 is great for touch ups between sharpenings when a steel won't do the job.
Customer Review: Can't say enough good about this device. Summary: 5 Stars
My father in law bought one of these last year and has been raving about them. Finally he bought all of his (adult) sons and daughters one for Christmas.
I really appreciate now where his raves came from. This device is magic. I have used a Chefs Choice manual sharpener for years and it does only an OK job. I have used a Chefs Choice electric sharpener, but it was only a frustrating experience fighting with the magnets that are supposed to hold the knife at the correct angle. For $130 and a lot of frustration it was not worthy to me.
Enter this AccuSharp device for $10. Any skepticism I had was gone after a few swipes on my Victorinox Forschner chefs knife. The AccuSharp is so easy to use; no more fighting knife angles against rollers or magnets.
There is a magical sensation when your knife is properly sharp: the friction of the sharpener against the knife disappears. I can *feel* when the knives are sharp!
I have sharpened all of my knives (which I have tried to keep sharp) and I could not be happier with the result. I rarely am so enthralled with a simple device that I take the time to review it on Amazon.
From now on all I need is an occasional few light passes over the knives and I am set!
Customer Review: I love this thing Summary: 4 Stars
I have had this sharpener for 6 years and I use it often. I use it on kitchen knives. fishing and hunting knives and the knives I classify as "survival" knives as well as folding pocket knives and multi-tool blades. The reviewers are right about it taking off a decent amount of metal, but the directions state to use light pressure and more strokes on the blade, so I can't agree with those who say it takes off "alot". Maybe they should try less pressure. Even for the most expensive blades I have, this is acceptable, especially as I do have the skills to use a regular sharpening stone and use this on the more expensive knives about 40% of the time. I usually use it on them when on a hunting or camping trip. When I first bought this and took it on a deer trip and all my friends laughed. When we gutted and skinned the bucks it was a different story. Not only did my Case fixed blade stay sharp the whole time, but I sharpened 2 other guy's knives so they could finish skinning. It does not give the same edge as when I use a stone, but it takes 1/10th the time to get a useable edge and that is worth it. BTW, Sometimes I am not looking for a super razor sharp edge, but sharp enough to get the job done. I would recommend this product to anyone.
