Tools and Hardware Reviews of AccuSharp 001 Knife Sharpener

Customer Review: Same, but different...
Summary: 5 Stars

This is a knife sharpener that works on the same principal of crossed sharpening components that has been around for many years. The difference is the material the sharpening blades are made from. Tungsten Carbide is an incredibly hard material (9 on the Mohs scale, diamond is 10) and for that reason it doesn't "grind" the knife edge like most sharpeners do as much as it "shaves" the knife edge. The result is an incredibly sharp edge in literally 5-10 passes.

It is cheaply made, with plastic components and a wonky safety guard, but it is also sold cheaply and does an absolutely fantastic job of taking a knife as sharp as a broomstick and putting a perfect razor edge on it in seconds. It's price is more than fair. It's a steal.

TIP: For a BADLY dulled edge, use firm pressure for 2 passes and then very light pressure for 8 passes. You'll get great results every time and you're done in 15 seconds.

Customer Review: Its a really decent product
Summary: 4 Stars

Hi everyone,
I bought this product to sharpen my knives as a replacement for the cylindrical sharpening tools you get with knives. It works really well, my knives are cutting through tomatoes again easily (yes this is how I rank sharpness). The product was easy to use and not much effort or force is needed; all you need to do is follow the instructions. There is only one bad side to this sharpener (that is why I did not rate it a 5 stars); the product reshapes the angle of the edge of the product before sharpening, so slender narrow edges become slightly less slender (i.e the angle increases). I would like to see in newer versions, a way to adjust the angle of sharpening, to better conform to the original sharp edge angle. The product also dose not cater for blades in which the blade is only sharpened on one side.

All in all a really decent product. I still recommend it.

Customer Review: A great tool, but not for all knives.
Summary: 4 Stars

This is without a doubt a great tool. It quickly sharpened some cheap knives I had laying around, taking them from dull to a razor's edge in minutes. However, that is not without a price.

I'm glad I used my cheaper knives to test it out, since it takes off quite a lot of metal. And by "quite a lot" I mean a substantial amount. Of course, this is how the accusharp manages to get that nice edge so quickly, but I would refrain from using this on any high-end knives.

It's great for the kitchen, great for the cheaper EDC knives, but I would refrain from using this on your antique 17th century cutlass. Or any higher priced Benchmades. It just takes off too much steel to be a feasible option. And of course, you don't have the option of angling the cut. But then again... If you're bothering to read this (or even own any more valuable knives at all), you would know this already.

4/5.

Customer Review: Works well, but does not last...
Summary: 2 Stars

I ordered this item at the same time that I ordered a J.A. Henckels 8 Piece Stylus Block Set. When I first received this sharpener, It worked well at keeping the knives very sharp. After using it for around four months, honing the knife blades about once a month, I needed to open it up and reverse the carbide inserts because it had stopped sharpening the knives.

Within another four months the sharpener was completely useless. It wouldn't work any longer. So the carbide inserts do need replacement after 30 to 40 times of use, and the carbide inserts that need be replaced are at a cost almost equal to what I had paid for the entire unit the year before.

The "5 to 10 years of use between blade changes" on the product page is a complete exaggeration. I, just two weeks ago, paid over $7.00 to Amazon (best price on the web) for a new set of replaceable blades, after 8 months of light use.

Customer Review: Overhyped
Summary: 1 Stars

I think you will find this item an overhyped item. It is incredible that 203 reviewers average 4.5 stars on this item. It works but the end result is not a blade that is super sharp. I have worked in the restaurant business for the last twenty years of my life. I have not tested the results of this on a serrated knife. However, the angle at which it sharpens at is not the sharpest that it will leave a blade and I find myself sharpening as I have always done with a sharpening rod or a sharpening stone. That said, I believe that if you are skilled at either of the above then I would not recommend purchasing this item - however, if you are not, then this item should work. I don't find that it works that well on my molybedenum/vanadium knives, and a little better on the pure steel knives (most people don't have them because they rust a little easier). That is my thoguht.
