I ordered two shapeners. And two replacement blades sets. I have to say this shaperner is the best ever. When it arrived I sharpend every knife I could find. Kitchen knives of all kinds even the old sets from 25 years ago that got put in a drawer becuase they were dull and the shapepening steel became useless. Pen knives, Buck knives, pocket knives, work knives, swiss knives and more. I sharpened hard to sharpen knives. Every one was razor sharp. After sharping over 40 knives I was loooking for more knives to sharpen.Don't be put off by bad reviews. You know the ones where the guy brags about leather stropes, diamound marble oil honed ect that took a hour to produce a edge that only use will be used to shave a few hairs off a arm. No the thing is not as good as that......... but its pretty darn close. You will love it. After over 40 knives this thing is still going strong. The blades are reverseable. I just used it on my fish filet knife. One or two light stokes and it was joy to use that knife.

I ordered AccuSharp 001 Knife Sharpener at the same time that I ordered a J.A. Henckels 8 Piece Stylus Block Set. When I first received this sharpener, It worked well at keeping the knives very sharp. After using it for around four months, honing mostly the three knife blades used most about once a month, I needed to open it up and reverse the carbide inserts because it had stopped sharpening the knives.

Within another four months the sharpener was completely useless. It wouldn't work any longer. So the carbide inserts do need replacement after 30 to 40 times of use, and the carbide inserts that need to be replaced are at a cost almost equal to what I had paid for the entire unit.

The "5 to 10 years of use between blade changes" on the product page of the AccuSharp Sharpener is a complete exaggeration. Just two weeks ago, I paid over $7.00 to Amazon (best price on the web) for a new set of replaceable blades, after only eight months of what I consider to be light use.

I purchased the replacement blades with my first of three purchases of the Accu Sharp Knife Sharpener. I have since learned that the blades on the knife sharpener can be removed and turned around with no need for replacement blades and at the low cost of the knife sharpener I will just replace the entire unit.

Update July 28, 2010: You know that "junk" that's always in the bottom of every drawer in the kitchen? This is it! It'll still be there when I'm dead and gone and someday some sweet young thing will come along and solve the problem and just hold the drawer over the trash can. There, done and done - says the sweet young thing as she happily empties years of clutter and accumulation.

i bought a cheapy katana recently, not a legit forged steel katana...just one made from stainless...but nonetheless if im going to have a sword it should be sharp, right!? anyway my choices were to get the special oils and sharpening stones OR to get the accusharp...well i chose this and it REALLY does work...since my sword was more of a display it didn't already really have an edge on it, so it took a while to get it sharp,,,but now it is just as sharp as a chef's knife...if you already have a blade or an edge to what you want to cut it shouldn't take long at all to sharpen....5 stars!

This is partly a review of the sharpener itself. The system just rules! I've been sharpening knives for year with all sorts of different mechanisms and this is the simplest, most accurate way yet.

It does mean you'll spend quite a bit of time at first, for you have to grind the knife down to the angle of the sharpener, which can be a bit. But once that's done, you're good and then it's just simple touch-ups from then on out.

Don't buy a high-end electric knife grinder. They don't work anywhere near as well as this Accusharp system.
