I received this brownie pan as a gift. I've used it a half dozen times always with a family scratch recipe. The brownies do come out as advertized in that they each have two edge pieces. What I find frustrating about the pan is that it is relatively difficult to load it with a thick sticky batter (brownies!!) and therefore it takes more time to get the batter properly distributed. If you don't attend to getting everything level before you put it in the oven you get some thick and some too thin brownies and if you leave any batter on the side walls (inevitable when trying to level the batter out), those bits are just still stuck there. I've learned to use a spatula to clean off the walls after loading the pan but that is yet another extra task. Maybe these issues don't occur with box brownies, don't know as I never make them.
Bottom line: very expensive brownie pan that takes extra time to load and makes only a single batch at once. I'd prefer to just use a couple of 9x9 pyrex or one double size pyrex pan.

I bought this brownie pan after some hesitation because of the price. However, since I am a professional baker, I know that you sometimes have to pay for a quality piece of baking equipment. I used the brownie recipe that came with the pan, and they came out perfect the first time! As I live at high altitude, I always have problems with my brownies falling in the center, even after adjusting the recipe. So this was pure delight as I saw the brownies come out perfectly without any adjustments to the recipe. The only thing I did differently was bake the brownies for 5 minutes less than it stated. I am excited to try my own recipes with the pan also, but Chef Emily's recipe is really good. This pan is very high quality...heavy duty, and great non-stick finish...I can see it lasting a lifetime as long as you care for it as described. I don't mind washing it by hand, as I always do that with all of my baking equipment to keep it in the best condition. Wonderful product that I would recommend to anyone.

I finally bought this pan a couple of weeks ago from my husband's and my wedding registry. We used it tonight to make a batch of brownies(not from scratch, but still delicious) and the results were fantastic! The non-stick costing inside allowed the brownies to pop right out of the pan with hardly any fuss. The pan even came with a little nylon spatula that fits perfectly within the rows. I used that to both cut the brownies slices and to serve. All the edges are beveled, so there is no issue about sharp corners collecting cooked on food, and it washes clean with hot soapy water. We also love the crispy edges from baked rigatoni and homemade mac-n-cheese and he suggested we bake our next casserole dish in the Edge pan for maximum crispy edges. I look forward to giving that a try.
WARNING: The current price is near $90, but we purchased ours, new, for 34.95. I am not sure why the price has suddenly jumped so high. I recommend waiting until the price drops again before purchasing.

I have had this pan in my amazon.com cart for years... waiting to see if the price would ever drop to an amount low enough for a novice baker, such as myself. Well, I waited and waited and waited... and the pan never seemed to change in price (stuck@$35ish). So this year, I listed it on my Christmas list and am so glad I did! There is a learning curve to using this special pan, so read the directions!!! The box included the magical pan and a plastic utensil, which I thought was a scraper for cleaning the pan; however, after baking my first batch of "Death-by-Chocolate Brownies," and getting chastised by my mom (baking expert) for trying to use a regular old kitchen knife to cut them up, I read the thin booklet that came in the box and realized that the plastic utensil was actually a slicing and scooping implement... go figure! love it! do not use metal implements, i.e., knives, spatulas, etc. with this pan, and it should last you forever and ever! did i mention that i love it?
Customer Review: Hand Wash Only, Bake using minimum time... Summary: 4 Stars
I received this as a gift and I have to say that I love the brownies that have come out of it. It takes a little longer to spread the batter than a traditional pan, but it's not that difficult,... just work your way around using a spatula to push the batter out of the bowl into the pan, then pick up the pan and give it a couple of shakes to spread the batter to the edges. I generally use boxed brownie mixes and bake according to the minimum time, then allow it to sit for several minutes so that the edges harden while it cools. I use a bit of Crisco around the edges and the whole thing can pop out if you want to flip the pan.
The only think I really don't like is that it is "hand wash only". I think a couple of the 1-star reviewers discovered why. In any case, hand wash is a pain compared to a traditional pan because you have so many more crevices to clean out. I'd give them 5 stars if they improve the coating so that it's safe for the dishwasher.
