Tools and Hardware Reviews of DMT D6F 6-Inch Dia-Sharp Continuous Diamond FineCustomer Review: DiaSharp 6" FIne - Awesome Summary: 5 Stars
Except for the fact that 6" is barely adequate for sharpening your larger cutlery, this stone will yield superior results if you know how to sharpen. I have an older DMT with the holes in it, and I have tried many other stones over the years as well. Wet slushy methods, Japanese Samurai sword polishing stones, lots of stuff. But this DMT continuous surface is it. I use a little bit of gun oil, maybe 2 drops. But you don't even need that. DMT says soapy water is good.
This fine grade stone is good enough to take fine cutlery to paper slicing readiness. Every knife in my Henckels block is wicked sharp, just a villainous edge on every one. I can't wait to get the extra-extra fine stone in the 11" size, so I can take my blades to shaving sharp!! Once in awhile I can get my blades to take off hair with just a few scrapes with this stone, but it's not easy.
6" is a cool size for smaller blades, and very affordable, but for longer blades you have to do one half, then overlap and do the other half for best results.
Sharpening is, and I can say this after about 5 years of dedicated practice, half knowledge and technique, and half feel. When you get the angle just right and you make a pass that really finishes off the edge, you can feel how it drags a little differently. Also, different blades are cut differently, so the angle that is often touted as optimum, 22 and 1/2 degrees, or whatever, is not optimum for every blade. You have to look closely, maybe with some magnification, and see how the blade edge is beveled and what kind of contact you are making, before you decide on the perfect angle for that set of knives, or individual blade.
Good luck! It takes awhile to get good at this, but it is a very satisfying skill, and there is no better stone out there I have tried - nothing comes close. I suggest searching out some info on the net. There are some amazing web sites that helped me tremendously.
