And it's better for your knives than those countertop sharpeners that scratch them up.
If you have a "sharpening" steel that came with a set of kitchen knives, you've probably found (like I did) that it's pretty useless. Yeah, if you get a burr or small roll in the edge of a knife, those steels can straighten it out, but that's about it. When the edge gets dull, you need a real sharpening steel.
When you use this steel, you can feel the difference right away. There's a little resistance when you're sliding the knife across it--not enough to make it difficult to slide, but enough that you feel like you're actually doing something. It takes a little practice, but once you get the hang of it, you can get a good edge on a knife in about 20 seconds.
This isn't meant for reconditioning a damaged or really dull knife, but it keeps the edge sharp for knives in normal use. I probably sharpen each of my knives every couple of weeks (less often for the ones I don't use as much). It's quick, I enjoy it, and I have sharp knives without any of the scratches in the finish left by cheap countertop pull-through knife sharpeners.
