Single pre-baked and partially pre-baked (lemon meringue)crust didn't get soggy during initial baking. Filling with beans or rice can get slightly soggy until removed and further baked.
I tried a Southern softer flour so that may be the variable responsible for the crust shrinking down the sides. But the pies came out great just the same.
I'm curious about baking upside down sandwiched between 2 pie pans. I will try the chain again with Pilsbury flour dough.

"Make sure your pie crusts bake evenly and without air pockets. Over the years, we have used rice or beans for pie weights to stop bubbles and cracks in our pre-baked shells. They work but they are a pain-in-the-neck. How do you get the hot beans out of the pie shell? Besides, the beans act as a heat sink and we're always guessing when the bottom crust is done. This slick device ends both problems. Just lift the chain out. And the chain won't interfere with the crust baking as most pie weights do. It's the right way to avoid bubbles and cracks in your pre-baked shells.Baker's Note: We cruised the internet to find similar products.
