I'd been looking for the right half-sheet pan for several years with disappointment, so when Cook's praised it, I took a chance. It was everything they said it would be. I ordered three more and got rid of all my old ones because this is just a step up. My cooking actually improved because I switched to these. I never used to realize how much equipment counted and just thought I wasn't doing a good job in the kitchen. Now I know - start with the right tools.
My experience: food cooks more evenly and doesn't stick. I frequently roast up a batch of potatoes in olive oil and rosemary and they come out perfect time after time, and more quickly than with my old pans. I have actually begun to specialize in roasting all kinds of vegetables as a result of having these pans. I never have problems anymore with food burning or sticking before it's cooked through, or with some pieces overcooked or undercooked depending on where they were in the oven. The pan is so heavy-gauge, it evens out the heat the way a cast-iron skillet does on a burner. And no more lining the pan with foil for easier cleanup; it's just not needed, and food comes up from the pan far more easily than it would from foil.
There's been some discussion of whether this pan warps. Any pan CAN warp, but too many will always do it even when used as intended, while most are susceptible to it under the right conditions. This is the most anti-warp pan I've ever seen. All I do to uphold my end of things is avoid quick temperature changes. I let it cool before washing it, and don't pour cold things into it while it's hot, or vice-versa.
After three years of very heavy use, mine are still pristine and unwarped, flat as a pancake. Cleanup is a snap; either food slides off it easily with a brush and hot soapy water, or rarely, the pan needs a 5-minute soak and then just wipes clean with a soapy sponge. I don't put mine in the dishwasher, so I won't comment on any possible side effects of that. I actually find it's just quicker to give them a quick wash-up over the sink rather than take up dishwasher space. They are that easy to care for.
Note: these pans are VERY heavy and you will pay for it in the shipping. In my opinion it's totally worth it. These pans will be the only ones you need for the rest of your life if you treat them well. For me, they also made several other, bulkier kitchen items redundant. If you have a good half-sheet and a good rack, you really have nearly half the equipment you need. Add a good heavy skillet or two and a few mixing bowls, and you've got yourself a working kitchen.

This is a wonderful sheet pan, and as Norton South, "Decoder" meticulously demonstrated in his review, this Lincoln Food Service heavy duty half sheet pan, which received high marks from America's Test Kitchen, is now called Vollrath Wear-Ever, model number 5314. So far I have baked beautiful chocolate chip cookies with it (the America's Test Kitchen recipe), and roasted vegetables (a mix of carrots, parsnips, pearl onions, small potatoes, and mushrooms). The pan performed beautifully - cookies even and perfectly baked, vegetables roasted to caramelized perfection.
My pan has different hallmarks than the pan pictures submitted by other reviewers. Mine has the model number, 5314 (identified by Norton South, "Decoder" as the 13 gauge heavy duty), VOLLRATH below that, WEAR-EVER below that, MADE IN USA below that, and the numbers 29110 below that. There is also an NSE hallmark in a circle. I'll post a photo as soon as my phone charges :)
Be careful who you purchase the pan from, though. I ordered mine through Amazon.com, and the order was filled by Next Day Gourmet L.P. I ordered two half-size sheet pans. They came unwrapped in a box with a bit of brown paper stuffed on top of the box. There was no damage to the box, but when I removed the sheet pans, I noticed that one of them had FIVE dents in it and several scratches. I phoned Next Day Gourmet L.P., and to their credit, they said they would send out a replacement immediately, and did not require me to return the damaged pan. After I got off the phone with them, I took a second look at the other pan, and found that the lip of the second pan had a big dent in the corner. This was not in a place that would affect the performance of the pan, so although I was disappointed to receive TWO dented pans, I did not call them back to report the damage to the second pan.
Several days later I received the replacement pan, and it is in good condition. So, I ended up getting three pans for the price of two, although only one is completely undented. The pan with the multiple dents will still be serviceable for some types of cooking, such as roasting vegetables, but I wouldn't use it for baking cookies.
I highly recommend this pan! I'm still waiting to receive the CIA 23304 Masters Collection 12 Inch x 17 Inch Wire Cooling Rack, Chrome Plate Steel that I ordered to go with the sheet pan.

WEAR-EVER #5314 = 17¾" x 12-7/8" 1" [NSF rated] Natural (shiny) Finish, 13-gauge AA3004 Aluminum, with an OPEN BEAD surround (i.e., there is a lip but not a "rolled" edge bead surround).
The WEAR-EVER Part Number is stamped into the metal on the underside of every pan.
Take care not to confuse this item with the quite similar: WEAR-EVER #5303 = 17¾" x 12-7/8" 1" Natural (shiny) Finish, 18-gauge AA3003 Aluminum, with CLOSED BEAD surround (i.e., a "rolled edge" with a galvanized steel wire-bead insert)... #5303 is a fine pan, itself, but somewhat lighter in weight (and with the rolled bead, arguably more ergonomic). The type #5303 is a Half-Sheet Pan which usually sells for a few dollars less than the heavier, NSF-rated WEAR-EVER #5314.
WEAR-EVER also make a #S5303 variant (with a Wear-Guard coating), costing almost twice as much; as well as a #5303P variant (perforated); and they also make a MUCH lighter-weight, 19-gauge #9303 "economy" variant, which costs only half as much as the Half-Sheet Pan pictured here.
The "Cooking Rack - CIA Masters Collection" is an ideal accessory for these pans, as is the "Silpat 11-5/8-by-16-1/2-Inch Nonstick Silicone Baking Mat", or equivalent, sold separately here on AMAZON, and elsewhere.
fwiw... Baking Pans are usually bought, and often used in pairs; regardless of Part Number / variant they are all stackable, one inside another; and personally, in my modest home kitchen I found one #5314 Heavy-Duty and one #5303 Standard Pan, along with one nice cooking/cooling rack and a silicone mat accessory to be the ideal set solution.

What a pan i thought, nice shiney surface heavy duty feeling to it..after reading all the reviews on this pan i still went and
got it..well the shipping from next day g_____ was in 2 days no complaints there..that's where it stops, as soon as i opened the
bubble wrapped pan i notice it was dented on the lip of it..not as to where it would mess up the perfomance of it but the look sure was..you figure for 20 bucks they coulda put it in a box instead of a envelope..then i put it thru the oven test i made 2
pan pizza's on it at 375 degrees..they were in for 35 or so minutes well i coulda swore the pan warped on the oven rack..but when
i took them out and set it on the counter it was still in good shape no warpage..then i read that these desinergrate in the
dishwasher,so i washed it by hand..well to my shock i used a scrubber SPONGE on it and guess what it left swirls from the scrubbing part..my god i didn't even rub that hard on it either so thats another disappointment i got..and as far as i recieving
it dented i talked to a wonderful lady there who said they will replace it free..i just hope the next one comes in good shape an
has a tougher finish on it than this one..over all it's not a bad pan but surely not the best out there like a.t.k. say's..plus
i got a bargain on it normal price was $[...] i got it on sale for $[...]..but my search will continue for the perfect pan maybe

Customer Review: Severely Disappointed!! Buyer Beware! Pan Warps. Overpriced. Not Dishwasher Safe. May Be Toxic. Summary: 1 Stars
I usually don't write reviews, unless I feel strongly for or against a product.
This is the first time Cook's Illustrated botched up a recommendation/review. After reading their review, I was so excited to buy pans that would not warp. I bought 2 from [...] ([...]) for [...]. So I thought I got a great deal.
Not.
The first time I put it under the broiler, the pan warped. When I put it in the dishwasher, it discolored. Not Dishwasher safe.
After learning my lesson about the dishwasher, I left my pans soaking in the sink. Unfortunately, the pans discolored badly, turning the pan a dark brown color (unevenly). I think it may have oxidized with something in the sink. I've *read* that if aluminum reacts to acidic food, it could be toxic. However, I don't know if this is true, so buyer beware.
And for those cynics out there....I did buy the right pans. After heavy research to confirm the pan is indeed the one recommended by CI, including going to Lincoln Foodservice website ([...]), model number 5314 is the only 13 gauge aluminum pan made by Lincoln Foodservice [...]).
Bottom Line: Overpriced pans did not deliver. Pan warps, is not dishwasher safe, and may be toxic (due to oxidation). The search is still on for non-warping, non-reactive half sheet pans.
